So I made my first ever vegan mac & "cheese" yesterday, which is a little bit crazy because I used to live on Kraft Dinner. This was of course before I learned how to cook. Oh dear.
Anyway I made this and I must say, I love it. I also had 3 non-vegans compliment it, and I swear I wasn't even fishing for compliments. I brought it for lunch and my friend asked if she could try it. I heated it up, and on my way back from the microwave someone else stole a bite and said it was really good. I asked them if it was "cheesy enough" for kicks, and when they said yes, I told them about how it had no cheese. She was surprised. It's nice to hear positive comments about veganism for a change. Everyone who heard about it thought it was crazy how something can't taste cheesy without having any dairy. I find it pretty amazing myself. For the record the friend who originally asked to try it liked it so much she asked for the recipe. She also said she tasted cinnamon in it. Weird.
The recipe itself fairly foolproof I suppose, as I didn't measure any of the ingredients and still came out with something I loved. I only changed a few things, I used almond milk because it's what I had. I wonder about them recommending vanilla...odd. I also think the recipe can do without the salt.
